Apple
and Raisin Cake
350g sugar, 300g flour, 6 eggs, 1 packet of baking
powder, 3 dessertspoons of powdered almonds, 2 dessertspoons of oil, vanilla,
5 large apples, 1 glass of raisins in a little rum (rum is optional).
Mix
the eggs and the sugar well.
Blend in the flour and the baking
powder.
Add the oil and the vanilla, stir and then mix in the powdered almonds.
Peel the apples and cut them into eight, blend them and the raisins into
the mixture.
Put into a greased and sugared dish and place in the oven at 180°C
for approximately 40 mins.
Prick with a knife to test if cooked.
Turn out while still lukewarm.
You may want to decorate the top with chopped almonds prior to cooking.
Care should be taken with the temperature of the oven as almonds burn
easily.
